here we go again, a quick round of correspondence with a second Indian recipe. In this case, an appetizer of meatballs fried in olive oil and lentils accompanied by a nice sauce made of yogurt and coconut. The peculiarity in this recipe is that the lentils are used raw!

Ingredients for four people

250g lentils
fresh chili cumin seeds in oil
Oil for frying Salt

Two jars of natural yogurt
fresh coconut (to facilitate transactions, purchase one already sliced) Chilly powder

Preparation

Wash the lentils and leave to soak overnight (or day if cooked in the evening).
Blend lentils with a teaspoon of cumin seeds, the desired amount of fresh chilli (I will put one of those about two inches long), a pinch of salt, a teaspoon of olive oil. The compound requires a bit ' time to be uniform and may need to add a little water.
now to heat the oil for frying. I strongly advise against palm oil and the sunflower, for the rest, see ye, each one has its own whims and for the moment I do not care to address this matter. I'll just say that when I fry for many people or, as in this case, for different dishes (I have prepared all the Indian recipes in one night), use peanut oil which has a smoke point of interest. Of course, olive oil is preferred, but not only has a much higher cost, it also has a very intense aroma and flavor that, with these balls of lentils, not has nothing to do.
Back to oil, whatever it is. Now it is hot at the right place and ready to welcome our meatballs. I've had made of the quenelles, working with two spoons, because the dough has a consistency that makes it easy to do it ... Now I realize that it was time to add a video ... When they become browned and firm it's time to turn them over. It takes a few minutes.
Let the sauce: Place the yogurt in the gravy boat that will appear at the table and Add the chili powder in quantities to your liking. Grate the fresh coconut and add to the mixture. Serve the meatballs
put neatly on a platter after they dry with paper towels. However, we know that if you have fried to perfection, your balls should be dry. At this point, each diner will serve meatballs and sauce!
