Sacher The cake is served at a temperature of 16-18 degrees, not accompanied with fresh whipped cream and a cup of coffee or tea. The cake Sacher
is a real calorie bomb because of ' ipercaloricità of ingredients used, especially the chocolate and butter.
Here is the recipe for one of its many imitations.
I got really good and is very close to the original that I have tasted some years ago in Vienna!

Ingredients: 150
butter
130 grams of sugar 6 eggs

160 grams of dark chocolate (I 190)
150 grams of flour
100 gr of apricot jam (I 1 can Santa Rosa)
For the topping:
60 grams of sugar

a knob of butter 2-3 tablespoons milk or dark chocolate
150 (I 200)
Equipment :
pan of 24 cm in diameter
Procedure:

Soften butter at room temperature, then butter and flour to a bowl tortiera.In work the butter and sugar until mixture is white and fluffy. Separate egg whites from the yolks and add them one at a time, the mixture of sugar and butter.

Break the chocolate, put it in a pan and melt in water bath at gentle heat, remove from heat, let cool and incorporate the compound previously prepared. Whisk the egg whites, add them to chocolate mixture, stirring gently with a wooden spatula from the bottom up, thus continuing to add the sifted flour.

Heat the apricot jam in a pan, making it soften, and fill the first layer of cake evenly, (I have a bit wet with 'rum even though the recipe does not it provided excellent results).

Overlap the second and brush with rum and also jam the surface of it. Prepare
coverage. Break the chocolate, take them apart a bit and put the rest into a pan with butter, milk and sugar, melt in water bath and gentle heat, stirring constantly gently.


Pour the melted chocolate on the cake, spreading it evenly even at the edges with a spatula and cool completely dessert.
