cake caprese is a typical Neapolitan cake, from the island of Capri, a delicacy made of chocolate and almonds without the addition of flour that is rather low, crisp outside but moist and soft inside.

Ingredients: 200 g.

200 g. sugar
dark chocolate 200 g. almonds with skin
180 g.

butter 5 eggs 1 small vial of almond flavoring 1 teaspoon vanilla



Procedure:

very well chop the almonds and sugar.
Melt the chocolate with the butter and whisk the egg yolks. Add to the mixture of chocolate and butter.

Add the ground almonds and sugar.

Mix all ingredients well.

Beat the egg whites until stiff. Then add to the mix also the egg whites until stiff.

Put the mixture in a buttered and floured mold opening.

Bake in preheated oven for 10 minutes at 200 degrees for 40 minutes at 170 degrees.

Let the cake cool very well.
